Scotch Eggs

Is there anything more delicious than a sausage-wrapped, deep-fried hard-boiled egg?


Ingredients

  • 8 hard-boiled eggs, peeled and at room temperature
  • 1/4 cup all-purpose flour
  • 1 1/2 pounds bulk pork sausage
  • 1 cup dry breadcrumbs
  • 1/2 teaspoon ground sage
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • Peanut oil for deep-frying

Instructions

  1. Dredge each boiled egg in flour.

  2. Divide the sausage into 8 equal portions, shaping each into a patty. Wrap each egg completely with a sausage patty.

  3. Combine the breadcrumbs, sage, and salt in a bowl.

  4. Dip the sausage-covered eggs into the beaten eggs, then roll them in the breadcrumb mixture.

  5. Heat the oil to 375°F in a deep fryer or a heavy-bottomed pot. Fry the eggs, 4 at a time, for at least 7 minutes. Once done, remove the eggs and place them on a wire rack over a rimmed baking sheet to drain excess oil. Serve hot or cold.
