 Sheet-Pan Grilled Cheese

Using two rimmed baking sheets in a hot oven works like a large panini press, making grilled cheese for a crowd quick and easy.



Total Time: 20 minutes
Yield: 6 servings

Ingredients:

  • 6 tablespoons mayonnaise
  • 12 slices of soft white sandwich bread
  • 3 cups coarsely grated cheese (such as Monterey Jack, cheddar, mozzarella, or a mix; about 12 ounces)
  • Kosher salt, freshly ground black pepper

Special equipment:

  • 2 (13x18") rimmed baking sheets

Instructions:

  1. Preheat the oven to 450°F and place a rimmed baking sheet on the center rack. Spread about 1 1/2 teaspoons of mayonnaise on one side of each slice of bread. Lay 6 slices, mayo side down, on an inverted rimmed baking sheet. Pile 1/2 cup of cheese onto the center of each slice, season with salt and pepper, then top with the remaining bread slices, mayo side up.

  2. Carefully remove the preheated baking sheet from the oven using oven mitts and place it, rimmed side up, over the sandwiches. Holding both baking sheets together, return to the oven and bake for about 15 minutes, until the bread is golden and the cheese is melted. Remove from the oven, transfer the sandwiches to a cutting board, cut, and serve.
