 Frozen Yogurt Bark

This frozen treat strikes the perfect balance of crisp, creamy, and subtly sweet, making it the ideal summer snack. Use pistachios and raspberries, or substitute your favorite nut and berry.



Total Time: 4 hours
Yield: Serves 6–8

Ingredients:

  • 2 cups full-fat unsweetened Greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • Pinch of kosher salt
  • 1/2 cup fresh raspberries (or other fruit/berries)
  • 1/3 cup chopped unsalted pistachios (or other nuts)

Instructions:

  1. Line a rimmed baking sheet with parchment or wax paper. In a medium bowl, combine the yogurt, honey, vanilla extract, and salt, stirring until smooth. Pour the mixture onto the center of the prepared sheet and spread it to a thickness of 1/4 inch. Sprinkle with raspberries and pistachios. Freeze until solid, about 4 hours. Break into pieces to serve.

Make-Ahead: Yogurt bark can be prepared up to 2 months in advance. Store in a resealable container in the freezer.
