 Charred Green Beans With Ricotta and Lemon

Grilled green beans on whipped ricotta make a simple yet elegant summer side. Pair with grilled bread for a fun appetizer.

Ingredients:

  • 1 1/2 pounds green beans, ends trimmed
  • 2 cups whole-milk ricotta cheese
  • 3 tablespoons extra-virgin olive oil, plus extra for drizzling
  • 3/4 teaspoon kosher salt, plus more as needed
  • 1 teaspoon finely grated lemon zest
  • Freshly ground black pepper
  • Lemon wedges for serving

Instructions:

  1. Preheat a grill to medium-high heat or heat a grill pan over medium-high. If grilling, place the green beans in a grill basket and set on the grill. Cover and grill, flipping once halfway through, until they are slightly charred and crisp-tender, about 8 minutes. If using a grill pan, cook the green beans directly on the pan, tossing occasionally, until lightly charred, about 10 minutes.

  2. While the beans cook, use an electric mixer to whip together the ricotta, 3 tablespoons of olive oil, and 3/4 teaspoon of salt in a large bowl. Mix on medium-high until the mixture is smooth and fluffy, about 2 minutes.

  3. Spread the whipped ricotta onto a serving platter and arrange the grilled green beans on top. Drizzle with olive oil, sprinkle with lemon zest, and season with salt and black pepper. Serve with lemon wedges on the side.
