BBQ Baby Back Ribs
Yield: Serves 4
Ingredients:
- 1 or 2 racks of baby back ribs (total weight: 2 1/2 to 3 1/2 pounds)
- 4 cups apple juice
- 1/2 cup cider vinegar
- 1/2 cup of your favorite barbecue sauce
Instructions:
Step 1:
Place the ribs with the bone side facing up. Slide the tip of a knife under the thin membrane on the back of the ribs and lift it up enough to grip it. Use a paper towel to pull off the membrane completely (or ask your butcher to do this for you). Repeat for the other rack, if applicable. Cut each rack in half.
Step 2:
Place the rib halves in the Instant Pot. Add the apple juice and vinegar. Secure the lid, ensuring the Pressure Release is set to Sealing. Select the Meat/Stew function and set it to cook on high pressure for 20 minutes (or 25 minutes for extra tender ribs).
Step 3:
Allow the pressure to release naturally for 15 minutes. Meanwhile, preheat your oven to 400°F and prepare a baking sheet by lining it with foil or a silicone mat.
Step 4:
After 15 minutes, switch the Pressure Release to Venting to release any remaining steam. Open the Instant Pot and use tongs to move the ribs to the lined baking sheet. Discard the cooking liquid.
Step 5:
Brush both sides of the ribs with barbecue sauce, then bake in the oven for about 10 minutes, until the sauce is caramelized and browned. Remove from the oven, slice the ribs, and serve.
Note:
For a simpler method, you can steam the ribs with water instead of braising them in apple juice and vinegar. While this results in slightly less flavor, the ribs will still taste great. To steam, pour 1 cup of water into the Instant Pot, place the trivet inside, and stack the ribs on top. Set the Instant Pot to the Steam function and cook for 20-25 minutes, depending on your preferred tenderness. Release the pressure, then bake as instructed.
